Intergalactic Cookbook – When Worlds Collide – Recipe#1 Bison Stew

Ingredients:

·        2lbs. cubed bison stew meat (you can substitute beef, but bison is a tasty high-protein, lower-fat option)

·        2 tbsp olive oil

·        1 large diced onion

·        4 cloves minced garlic

·        1 cup sliced carrots

·        1 cup sliced celery

·        10-12 mini potatoes

·        8 oz sliced mushrooms of your choice

·        1 cup of red wine

·        4 cups beef or bison stock

·        1 can (14.5 oz.) diced tomatoes

·        1 tbsp tomato paste

·        2 tbsp bisquatch sauce (can substitute Worcestershire sauce)

·        1-2 tsp salt (to taste)

·        1 tsp black pepper

·        1 tsp paprika (use smoked paprika if you like a smoky flavour)

·        1 sprig each of fresh rosemary and thyme (or 1 tsp of each if dry)

·        2 bay leaves

·        1-2 tbsp chopped fresh parsley

Directions:

1)     Prepare vegetables for cooking and set aside.

2)     Brown the bison cubes in a Dutch oven, remove to a plate and set aside.

3)     Sauté onions until translucent. Then add celery, carrots and garlic. Cook for a few minutes.

4)     Deglaze pot with red wine – scraping any browned bits.

5)     Return bison cubes to pot and add potatoes and mushrooms.

6)     Add stock, diced tomatoes, tomato paste, and bisquatch sauce. Followed by salt, pepper, paprika, thyme, rosemary, and bay leaves.

7)     Cover the pot and simmer on low for 2-3 hours.

8)     Taste the stew and adjust seasonings accordingly. Garnish with fresh parsley.
