This was the final meal Ivy shared with her family and Chloe on Earth before heading to a new life in places unknown and still to be discovered. Ingredients:

Vegetable Stew:

·        2/3 of a lb. of cubed butternut squash  

·        1 onion, finely chopped

·        4 minced garlic cloves

·        1 small scotch bonnet pepper, chopped fine (optional, for those who like a hint of heat)

·        ½ lb. of your favourite mushrooms, sliced

·        1 medium zucchini, cubed

·        1 can (400 g) of diced tomatoes

·        1 can (400 g) of white beans (cannellini)

·        2 tbsp of chopped sun-dried tomato

·        2 tbsp tomato puree

·        1 bay leaf

·        1 tsp each of oregano and thyme

·        1/3 cup of dry white wine

·        3 tbsp of olive oil

·        1 ½ cups of stock (vegetable or chicken)

·        ½ tsp each (or to taste) of salt and pepper

Directions:

1)     In a large sauté pan, heat oil. Add onions and a bay leaf. Sauté gently for about 5 minutes.

2)     Add garlic and scotch bonnet, if using. Sauté briefly, until garlic is fragrant.  

3)     Add wine. Stir, and cook for 1 minute.

4)     Add the squash and continue cooking for 5 minutes.

5)     Add the beans (including liquid from the can), tomatoes, sun-dried tomato, puree, herbs, stock, and salt and pepper. Bring to a boil, then lower the heat, cover, and simmer for 15 minutes.

6)     Stir in zucchini and mushrooms. Cover and continue to simmer for 20 minutes.

7)     Test for doneness and seasoning, and adjust if necessary.

8)     Enjoy this hearty with a piece of crusty bread.
