Ingredients:
Breakfast Casserole:
· 4 cups of cubed bread (toasted sourdough works well)
· 1 tbsp olive oil
· 1 lb farmers sausage or bangers, casing removed
· 1 tsp Quarterian seasoning blend, Italian seasoning blend can be substituted
· 1 cup chopped onion
· 2 minced garlic cloves
· 1 red or green bell pepper, chopped
· 1 cup sliced mushrooms
· 2 cups of chopped fresh spinach
· 12 eggs
· Salt and pepper
· 1 cup milk
· 2 cups shredded cheese (cheddar or Swiss)
· 4 – 5 drops of hot sauce
· 1 tsp dried parsley
Directions:
1) Grease 9x13-inch casserole dish. Arrange a layer of the bread cubes on the bottom.
2) Heat olive oil in a large pan. Add sausage and seasoning blend. Break up the sausage with a wooden spoon as it cooks.
3) Add onion, garlic, bell pepper, mushrooms, and spinach and cook until vegetables have softened, and sausage is cooked through (about 6 minutes.)
4) Spread sausage vegetable mixture over the cubed bread in the casserole dish.
5) In a large separate bowl combine eggs, salt & pepper, hot sauce, dried parsley, milk and cheese. Whisk until well blended.
6) Pour over sausage and vegetable mixture in the casserole dish.
7) Cover with foil or plastic wrap and refrigerate for a minimum of 30 minutes (can be refrigerated for up to 24 hours.)
8) When you are ready to cook it – turn the oven to 375°, pull the casserole out of the fridge to warm up.
9) Place uncovered casserole in the oven to bake for about 40 minutes, until golden brown.
10) Rest for a few minutes before serving. Enjoy this hearty dish with a salad of spicy greens with edible flowers.
