Ingredients:

Quiche Lorraine:

·        1 oven-ready frozen pie crust

·        6 slices of bacon

·        1 small onion, chopped

·        6 mushrooms, chopped

·        1 ½ cups shredded Swiss or Gruyere cheese

·        1 tbsp. flour

·        1 cup of milk

·        1 tsp fresh thyme leaves

·        3 large beaten eggs

·        ½ tsp each of salt and pepper

Directions:

1)     Preheat oven to 425°F.

2)     Follow the package instructions for pie crust.

3)     Cook the bacon in a skillet until crisp. Crumble or chop into pieces.

4)     Saute onion and mushrooms in the leftover bacon drippings until tender.

5)     Toss cheese with flour in a small bowl.

6)     Whisk together milk, eggs, thyme, salt, and pepper in a large bowl. Add bacon, onion and mushrooms. Then add cheese mixture. Stir until well blended.

7)     Pour egg mixture into pie shell.

8)     Bake in preheated oven for 30 – 40 minutes. Let stand for 10 minutes before serving.
